I wont lie...I'm a little famous for my salads! Never will you find a bowl of lettuce and ranch in my house! I love using the lettuce as a part of the salad, not the bulk. The yummy-ness comes from the addition of lots of different goodies - like cauliflower, bell peppers, onions, zucchini, fennel, tomatoes - any veggies laying around in the fridge! Figuring out a dressing without oil was a little challenging at first, but this dressing is by far my favorite! It's amazing over a simple salad of Romaine hearts, tomatoes, cauliflower, zucchini and red onions (leave out if you're strict 80-10-10).
Orange-Walnut-Tarragon Salad Dressing
1 Medium Orange, juiced
6 Walnuts
1/8 - 1/4 teaspoon Tarragon, dried (or to taste)
2 splashes Coconut Aminos - optional
Add 1/2 the orange juice, walnuts, tarragon and coconut aminos into a high speed blender - the Magic Bullet works perfectly. Blend for 45 seconds, let it sit for 1 minute - do this 3 times. The walnut should have made the dressing nice and creamy. Depending on how you like the consistency add the rest of the orange juice by the spoonful. I like my dressing runny - so 1 orange is perfect for my liking. YUM!
