Delicious Beet Recipes

Do you like beets? Some people find them a little too earthy tasting and avoid them all together. But, if I tell you all about the wonderful benefits you get from eating beets, made into delicious and easy recipes, I may be able to change your mind. Beets are a super-food, packed with essential nutrients, such as calcium,manganese, potassium, iron and vitamins B and C, protein, and much, much more.  These necessary nutrients have the following numerous health benefits:

  • improves digestion
  • improves free radical- and inflammation-related chronic diseases
  • enriches the blood (anemia)
  • lowers blood pressure
  • lowers risk of heart disease
  • improves heart health
  • helps protect the eyes from age-related macular degeneration and cataracts
  • improves liver function, slightly decreases cholesterol, and reduces liver size
  • stimulates enzyme activity throughout the lymphatic system
  • increases physical energy and endurance
  • improves brain health
  • boosts weight loss as they help the body detox
  • improves food for kidney and bladder health
  • adds a good source of dietary fiber — half soluble and half insoluble
  • and so much more...

Here are my two favorite recipes (for someone who never liked beets):

Lemon Verbena Beet Soup with Hazelnuts

Wash and scrub whole beets. Place them into a large pot with the Lemon Verbena or Lemon Balm and cover them with water. Bring to a boil and simmer until tender. Grind the toasted hazelnuts very well and mix into sour cream. When the beets have cooled off a little discad the Lemon Verbena or Lemon Balm. Trim the ends off the beets, and peel the skin (if desired). Puree in a blender or food processer. Add lemon juice, salt and black pepper to taste. You may serve this soup hot or cold with a dollop of hazelnut cream and some snipped chives.  

Beet Salad with Apples and Walnuts

  • 2 large beets
  • 1 medium apple
  • a few fresh walnuts shelled
  • 1 tbsp Parsley leaf finely chopped
  • 1 tbsp green onion cut into small pieces
  • 1 tsp mint chopped 
  • 2 tbsp olive or walnut oil
  • 1 tsp fresh lemon juice
  • 1 tsp honey
  • 1/2 tsp Vietnamese Cinnamon ground
  • 1/2 tsp Sweet Turmeric Blend
  • feta cheese

Wash and scrub whole beets. Place them into a large pot and cover with water. Bring them to a boil and simmer until tender. When the beets have cooled a little, dice them and add to a bowl. Core and dice the apple and add to the beets. Make the salad dressing by blending mint, olive or walnut oil, lemon juice, honey, Cinnamon and Sweet Turmeric Blend. Mix the dressing into the beet and apple, along with the rest of the ingredients, green onion, parsley, walnuts and goat cheese, and stir to coat. Serve at room temperature.
